An Extraordinary Variety
An ancient variety, of which by now, very few examples remain on Monte Pisano. It is easily distinguishable from the others due to the majestic bearing of its specimens and the hanging branches similar to the willow. Olives, the real wonder of this plant, have an inverted drop shape with a curved downward tip. At veraison they take on a red, tending to purple color rich in lenticels which makes it a sight for the eyes.
"JU" is the nickname of my wife Giusi Vaccaro. This oil hides in its sweetness, a strong and decisive character capable of surprising: just like her.
